I love making energy balls as my go to snack in between meals and for on the go. Dates are the key ingredient and add the sweetness that make them treatworthy. Then the rest is just experimenting with flavours. These carrrot cake inspired energy balls are some of my faves.

Prep Time 10 minutes
Ingredients
300g pitted dates
150g oats
50g walnuts
100g grated carrot
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon chia seeds
1 teaspoon vanilla extract
80g shredded coconut (for dusting)
Method
- Place all the ingredients (except coconut) in a food processor and blend until it forms a dough-like mixture.
- Roll the dough into spherical balls and dust with shredded coconut
- Place in the fridge to set
