200g frozen sweetcorn
2 spring onions, chopped
80g courgette, grated
Handful fresh coriander, chopped
1 tsp smoked paprika
1 tsp baking powder
1 egg, beaten
Splash olive oil
- Make the fritter mixture by combining sweetcorn, spring onions, courgette, coriander, paprika, baking powder, beaten egg and milk in a mixing bowl.
- Using your hands, mould the mixture into 4 burger shapes ready to fry.
- Heat the oil in a frying pan and add the fritters. Cook for 4-6 minutes each side, turning the fritters until golden brown on the outside and cooked through.
Served here with poached eggs, salad and a sweet chilli dressing.
